*Potato, raw, 2 medium (2-1/4" to 3-1/4" dia.) Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb Onions, raw, 0.5 cup, chopped 1 medium whole tomatoGarlic, 3 cloves Ginger Root, 4 tsp *Canola Oil, 0.25 cup saltpepperturmericcumin powder
Pour veg oil in pan,
Add garlic, ginger and onions
Saute until golden brown
Add tomato, potato and eggplant
Add seasonings salt,pepper,turmeric, cumin to taste
Add 1/4 cup water
Cover fry pan and cook on low heat until potato are tender and break with spoon.
Serving Size: Makes 5-6 servings
