Easy Smashed Cauliflower

Ingredients
4 cups fresh/frozen cauliflower1/4 cup Milk (we use nonfat in our house)20-40 sprays of butter spray or 1 tbsp. butter (to taste)dash of salt (to taste)
Directions
Cook cauliflower according to package directions or until easy to mash. Drain cauliflower and mash with fork or potato masher. Add milk until desired consistancy. Add butter and salt to taste. Enjoy!

    this was the best. a new way to eat veggies and to have mashed potatoes(cauliflower i mean) next to that main dish. my husband and I enjoyed it alot. you can add anything on top of this. great, thanks - 5/26/09
