2 Med Zucchini1 Bell Pepper (Red, Orange, or Yellow)1 can Unseasoned Black Beans1 can Sweet CornChipolte Peppers in Adobo SauceSalsa (any variety)Taco Seasoning to taste
Dice zucchini and pepper to approx. same size pieces
Drain and rinse corn and black beans
Add all veggies to pan and cook until tender
Add diced Chipotle Peppper, salsa
Add taco seasoning to taste
Let cook for 5 to 10 minutes
Enjoy

The best 10 minute meal I have ever made. I didn't have any zucchini so I just used a green and red pepper, added some green onion, and a little bit of sour cream.
I was skeptical at first about mixing corn with taco seasoning but this was awesome. Very good recipe and easy enough for anyone.

*This recipe sounds good - *HOWEVER- I can't rate it because I haven't tried it. *I like all the ingredients EXCEPT...*What are "Chipolte Peppers in Adobo Sauce * *Too often the recipes call for ingredients I have either never heard of OR the ingredient is not carried in the local super markets. - 5/18/15
