Broccoli Cheddar Soup

Ingredients
5-6 cups of Broccoli, washed and drained (about 4 whole stalks) 1/2 cup fresh chopped green onion 2 tbsp Yogurt butter 6 cups chicken broth - low sodium1/2 cup white all purpose flour 2 cup half and half 2 cup extra sharp cheddar cheesepinch of white pepper, salt, oregano, cumin & thyme
Directions
Cut broccoli into small pieces skinning any overly thick bottom stems. Steam broccoli in a medium pot until just tender to retain nutrients, about 8 mins. Immediately rinse with cold water, drain and set aside. In a large saucepan, sauté onions until caramelized and then add green onions for about two minutes in butter or until tender. Stir in chicken broth and slowly add flour, stirring constantly to prevent lumps. Bring to a slow boil on medium high heat and then reduce heat to medium and simmer for 5 minutes or until thickened, stirring occasionally. Add broccoli pieces to the broth. Mix in milk and Swiss cheese and simmer gently until cheese melts. Do not boil.
