Jo-Jo's Vegan Brownies

Ingredients
1/2 cup Garbanzo Flour1/2 cup Unbleached All Purpose Flour1/4 cup Potato Starch2 T. Arrowroot1/2 cup Unsweetened Cocoa Powder1 cup Evaporated Cane Juice2 tsp. Baking Powder1/4 tsp Baking Soda1/4 tsp Xanthan Gum1 tsp Sea Salt1/2 cup Coconut Oil1/2 cup Unsweetened Organic Apple Sauce2 T. Vanilla Extract1/2 cup Coffee (black, unsweetened)3/4 cup Vegan Chocolate Chips
Directions
Preheat oven to 325. Lightly oil (2) 12-cup mini-muffin tins with coconut oil. Mix ingredients. Use a mini scoop and put 2 level scoops of batter into each tin. Bake on center rack for 13-15 minutes, rotating tray after 7 minutes. Let cool in pan for at least 10 minutes.
