Salmon Cakes

Ingredients
4 Cans of Salmon3 Large Sweet Potatoes1 Cup of Bread Crumbs8 tbsp Parmesan1 cup chopped onion1/4 cup chopped celery2 tbsp Olive oil
Directions
Cook the sweet potatoes until soft in their skins in the oven.
Allow to cool.
Blend all ingredients except olive oil in a bowl.
Pour oil in to skillet and heat over medium heat.
Shape the mixture into patties and fry on each side approximately 5 minutes or until they hold their shape.
