Quinoa and Black Bean Vegetable Salad

Salad:1 cup uncooked Quinoa1 14 oz can of Black beans, drained and rinsed1 chopped red bell pepper1/4 cup cilantro chopped3 green onions chopped1 small avocado chopped into 1 inch piecesDressing:4-5 tbsp lime juice (juice from 2 limes)1/2 tsp salt1/2 tsp black pepper1 minced garlic clove1/4 cup cilantro chopped1/4 cup EVOO1/2 tsp ground cumin
Cook Quinoa according to package directions
While quinoa is cooking, prepare chopped vegetables and whisk the dressing
Allow quinoa to cool for 5 mins after cooking, fluff with fork
Add beans and other vegetables and toss well
Drizzle dressing over salad and toss to coat
Store in fridge for 1-2 days in a tight sealed container
