Old Fashioned Gingerbread

Ingredients
2 cups whole wheat flour2 tsp baking soda2 tsp ground ginger1 1/2 tsp. ground cinnamon1/2 tsp salt3 egg whites1/2 cup brown sugar, packed1 1/2 cups applesauce1/2 cup lowfat buttermilk
Directions
1. Preheat oven to 350 degrees.
2. Whisk dry ingredients together.
3. Place egg, sugar, and applesauce in a large bowl. Beat on high until thick and creamy. Beat in applesauce.
4. Mix wet ingredients into dry.
5. Scrape batter into a pan sprayed with cooking spray.
6. Bake 35 to 45 minutes.

    It's very flavored, but the texture is too much like bread for my personal taste. Still, the family gulped it in a few minutes, they are not picky eaters. - 8/7/10
