Spinach Strudel with Pine Nuts and Raisins

1 TB extra virgin olive oil2 garlic cloves6 oz bag of baby spinach1/2 package of thawed puff pastry2 TB raisins1/2 TB pine nuts toasted
Oven 375
- In a large skillet heat the oil over med heat.
- add garlic and cook for one minute
- add spinach and cook until wilted
- remove from heat and season with salt and pepper and then let cool
- unfold pastry on ungreased sheet
- line the middle third with half of spinach mix
- sprinke with half the raisins and nuts
- fold the third of hte pastry to your left and line with remaining spinach mix, rasiins, and nuts
- fold the third of the pastry to you right as far over to the other side as it will comfortable stretch and press the dogh together
- cut 6 one inch slits along the top and bake in the center of the oven for 25 minutes
- let cool on rack for 15 minutes
