Applesauce Carrot Muffins

1 c, grated carrot1/2 c, raisins1 3/4 c. whole wheat flour1 tsp baking soda1 tsp cinnamon1/2 tsp salt1 tsp nutmeg1 lg egg1/2 c oil1/4 tsp vanilla1/4 tsp lemon extract1 c. unsweetened applesauce1/3 c. warm water
Heat oven to 400 degrees. Grease 12 muffin cups. Combine water, raisins and carrots in small bowl and let soak. Meanwhile, mix flour and all dry ingredients except sugar in large bowl. Using electric mixer, beat egg and sugar in second bowl till fluffy. Beat in oil and vanilla and lemon extractm, then stir in applesauce. Stir applesause mixture into flour mixture only till blended. Quickly fold in carrot mixture. Spoon batter into muffin pan. Bankje 15-18 minutes.
