Apricot Chicken w. Steamed Kale

Ingredients
- 120g (about half a breast) chicken breast, no skin- 1.5 tbsp apricot spread- 1 apricot, chopped- 0.25 tbsp extra virgin olive oil- 0.25 cup onions, chopped- 0.25 tbsp apple cider vinegar- 2/3 cup chicken broth (no salt added)- 0.5 cup kale, chopped- 0.25 tbsp dried parsley- salt and pepper to taste
Directions
Heat a large skillet over medium high heat.
Add oil and chicken and season with salt and pepper. Lightly brown the chicken a few minutes on each side, then add onions. Cook 5 minutes.
Add vinegar to the pan and let it evaporate. Add apricots and stock.
When stock comes to a bubble, add preserves and stir to combine.
Cover pan, reduce heat and simmer 10 to 15 minutes. Serve chicken with a sprinkle of chopped parsley.

Serving Size: makes one delicious chicken breast (just multiply the amounts of each to make more!)
