Fresh Middle Eastern Style Salad

Ingredients
Cucumber - choppedParsley - finely dicedFresh Tomato - Chopped Onion, Yellow/White - ChoppedBlack PepperSaltOlive Oil, Extra VirginLemon Juice (fresh squeezed)**all veggies should be fresh!!! If needed to you can substitute fresh squeezed lemon juice with the store bought bottled kind, no sweat.**If some of these things are out of season or you are looking to use up some vegetables you have stashed in your crisper, you can also think about adding:celeryVERY finely chopped lettuce...it isn't the star in this salad!!carrotscilantro
Directions
Serving Size: Makes about 2 large servings

Chop all the veggies and parsley up and throw 'em in a bowl. You can do it very finely or coarsely, depending on your preference. Add salt and pepper to taste as well and drizzle both olive oil and lemon juice over salad. Mix well and taste, adjust lemon juice/olive oil/salt/pepper to taste. Let sit in your fridge for 10-30 minutes for best results, though if you can't help but eat it right away, I am sure it will still be delicious and who could blame you?
