Robin's Quinoa, spinach, tomato, feta and black olives

1/2 c quinoa4 cups baby spinach2 cups grape tomatoes6 oz feta cheese 1 cup black sliced olivespepper to taste
Boil 1 cup of water for 1/2 quinoa. Following directions on box, boil for 15 minutes (covered), take of heat and let sit for 5 more minutes. Slice tomatoes in halves and in a large bowl, add tomatoes, crumbed feta, torn baby spinach and olives. Stir in quinoa while still hot to melt the cheese a little. Top with parmesan if you like.
