1 pound: Skinless, Boneless Chicken Thighs, cut into 1-inch pieces.1/4 pound: Smoked Sausage, fully cooked2 stalks: Celery, sliced. (with leaves) (1 1/4 cups)1 large: Carrot, chopped (3/4 cup)1 medium: Onion, chopped (1/2 cup)1 can: (14.5 ounces) Stewed Tomatoes, undrained5 cups: Water2 Tbls: Chicken Bouillon Granules1 tsp: Dried Thyme Leaves1 Package: (10 oz) Frozen Cut Okra3 cups: Cooed RiceRed Pepper Sauce
1. Mix chicken, sausage, celery, carrot, onion, tomatoes, water, bouillon granules and thyme in 4- to 5-quart slow cooker.
2. Cover and cook on low heat setting 6 1/2 to 7 hours or until chicken is no longer pink in center. Stir in okra. Cover and cook on Low heat setting 20 minutes longer.
3. Spoon soup over rice in individual bowls. Serve with red pepper sauce.
