Orange Chicken

Ingredients
3 Chicken breasts or 1 lb. chicken tenders1 Cup of mushrooms, whole or in pieces1 Can of new potatoes1 Tsp. Herbs d' Provence1 Splash of red wine -- a shot glass, if you prefer to measure1 Whole lime1 Large navel orange1.5 Tbs. honeySalt and white pepper to taste.5 Tsp. paprikaServe over white or brown rice.
Directions
Preheat oven to 375. While defrosting chicken in microwave, place mushrooms and canned potatoes in bottom of baking dish. Splash wine into dish and then squeeze orange and pulp over mushrooms and potatoes. Add chicken, herbs, salt and pepper. Stir to mix and coat pieces. Drizzle honey and stir again. Cover dish and cook 45 minutes. Remove dish from oven. Squeeze lime over contents and stir. Sprinkle with paprika. Turn off oven, but place dish on center rack with door closed for 15 minutes more. Remove from oven and serve over white or brown rice.

Nutrition information does not include rice, and calorie count of recipe will be less if you don't douse the rice with juices from the pot. The chicken and vegetables are juicy and flavorful on their own.
