Grilled Red Potatoes

Ingredients
3 small Red Potatoes1 tbsp Olive Oil1 tbsp balsamic vinegar3 slices of onion2 tsp Garlic powder 1/4 tsp black pepper1/8 tsp salt1/4 tsp paprikaPam or other no calorie cooking spray
Directions
Slice the potatoes into 1/4" slices and par boil for about 2-3 minutes. Rinse with cold water so they stop cooking. Line a small tray (a toaster oven tray works great for this) with enough foil so that you can fold it up and seal it for grilling. Spray the foil with a little cooking spray. Lay the potato slices on the foil in a shingle fashion. Brush with olive oil just to coat. Brush with balsamic vinegar and sprinkle with salt, pepper, garlic powder, oregano and paprika. Divide the onion slices into rings and scatter them on top of the potatoes. Fold the edges of the foil up and fold over. Grill for about 20 minutes.

(You can vary this recipe by deleting the balsamic vinegar and adding a small amount of tomato sauce and drizzling some lemon juice on the potatoes after you brush on the olive oil.)
