Rainbow Kale Salad w. Steam Grilled Shrimp

Ingredients
Salad:- 50 g Shrimp, prepare in grill pan with water to steam (season with salt & pepper to taste)- 1 c Kale, chopped- 1/4 Yellow or Red Bell Pepper, cored, seeded and thinly sliced- 2 tbsp Red Onion, chopped- 2 medium Radishes, chopped- 1/2 Orange, peeled and slicedDressing: - 1/2 Orange Juice yeilds- 1 tbsp Balsamic Vinegar- 1/4 teaspoon Dijon Mustard- Pepper to taste
Directions
In a large bowl, combine kale, radishes, orange segments, onion, bell pepper and shrimp.
In a small bowl, whisk together mustard, orange juice, vinegar and pepper. Pour over the kale mixture and toss to coat. EAT UP!

Serving Size: makes one big summer salad!
