Quinoa 1 cup, cooked per package instructions1 fresh red pepper, cut into bite size pieces1 cup black beans, rinsed1 fresh mango, peeled and cut up3 tbls cilantro, chopped1 green onion, sliced1 jalapeno, seeded and chopped2 tbls olive oil1 tsp cuminjuice of one limesalt and pepper to taste
Prepare quinoa as directed. Make dressing with olive oil, cumin, and juice of one lime and whisk. Place all ingredients in bowl and toss until coated with dressing. Serve. Great to make and take left overs to work.
