Mediterranean Couscous

Ingredients
1 1/4 cups water1 1/2 T olive oil1cup couscous1 T liime juice1/4 cup minced green onion1/4 cup sliced black olives2 T capers2 T grated parmesan cheeseSalt and black pepper to taste
Directions
Boil water. Pour over couscous, stir, cover, and let sit for 5 minutes. Transfer to a large mixing bowl and add the rest of the ingredients. Stir with a fork. Refrigerate for at least two hours before serving in order to let the favors meld.
