Barley Salad with Dijon vinaigrette

Ingredients
3.5 cups of cooked pearled barley, chilled.5 cup of chopped purple onion3.5 cups of green beans, chopped, tops and tails removed1 large tomato, de-seeded and rough choppedFor vinaigrette:3 tbsp of olive oil1 tbsp of dijon mustard.5 tbsp of red wine vinegardried or fresh parsley to tastesalt & pepper to taste
Directions
Most of the work on this salad is prep. Cook the barley per package instructions, then rinse in cool water and let drain. Chop all your veggies.

In a small bowl, whisk together all the ingredients for the vinaigrette.

Toss barley, veggies and dressing and let chill for 30 minutes before serving.
