Tizza Soup - Diet Soup

Ingredients
Zucchini, 2 cup, slicedTurnips, 1 mediumLeeks, 2 leek *Artichoke Heart (1), 2 serving Red Ripe Tomatoes, 2 tomato Celery, raw, 0.5 stalk, medium (7-1/2" - 8" long) *(OXO) Vegetable Stock Cube, 1 servingOlive Oil, 1 tbsp Salt, 1 tbspPepper, black, 1 tbsp*Potato, raw, 2 cup dicedWater, tap, 4 cup (8 fl oz) (to cover vegetables 1/4 inch
Directions
Put all the vegetables in a large pot. Add the stock cube, olive oil, salt and pepper. Cover, just with water. Bring to a boil and simmer until all the vegetables are tender. Put the mixture through a food mill or blend with an immersion blender. Reheat to serve.
