Sara'a Taco Salad

Ingredients
Start with 1/2 of a taco shellAdd 1/2 cup white or black beansAdd 1/2 cup CornAdd 3 tbsp Diced Green ChilisAdd 1/4 cup carrot slicesAdd 1 cup shredded lettuce or you can sub spinach or salad mixAdd 1/3 cup Salsa
Directions
In a microwaveable dish, combine the beans, corn, carrots, & chilis. Cover and heat for 5 minutes on full power.

Place 1/2 of the taco shell in a bowl, add the heated mixture, add the lettuce and salsa. Toss it all together to coat everything with the salsa.

*To make this healthier, replace the taco shell with a very large lettuce leaf.

*To add more flavor, add 2-3 tbsp of ranch dressing to the salsa.
