eggless milkless pancakes

Ingredients
2 cups of flour4 tsp baking powder1/2 tsp salt2 tbs sugar1/8 tsp cinnamon3/4 tsp vanilla3 tablespoons butter, melted*1 1/2 - 2 cups water*use oil for dairy free
Directions

Combine flour, baking powder, salt, cinnamon and sugar into a medium sized bowl.
Stir dry ingredients with a fork or spoon.

Add in the vanilla extract and the melted butter.

Add in the water to the batter until the batter is the right consistency. I add in 1 1/2 cups first and then gradually add a bit more as needed. Not too thin or not too thick.

Now is the time to add in any of the extras your kids like.
I add in berries and bananas as the final step. When you add in blueberries and/or bananas be sure to only stir slightly.

Finally spoon the batter onto a heated griddle. Have fun making those pancakes!

    These turned out great! I just added a little more sugar (half white, half brown) and a little more baking powder to make them even more fluffy. I added bananas and topped them with coconut oil -- Very yummy! My little boy enjoyed them, too! - 7/1/13
