Turkey Sausage & Veggie Omelette

Ingredients
1 cup liquid egg substitute1 1/3 Jimmy Dean turkey sausage crumbles2 tbsp green pepper2 tbsp onion2 baby bella mushrooms4 cherry/grape tomatoes4 tbsp shredded sharp cheddar cheese2 tbsp Country Crock + calcium
Directions
Heat a small nonstick pan over low heat. Add in 1 tbsp of the butter. Once it is melted, pour in 1/2 cup of egg substitute. Let that cook for 5ish minutes. (That really depends on your cooktop.) Once the egg is set, the bottom should be done but not brown. Flip egg. Add in 2/3 cup sausage, 1 tbsp each pepper and onion, 1 sliced/chopped mushroom, 2 chopped tomatoes, and 2 tbsp shredded cheese. When the egg is done to your standard, fold over and remove to plate. Repeat to get second omelette.
