Swedish Pancakes

2 c flour4 large eggs1/4 c sugar2 c milk1/4 melted butter
In large mixer bowl, combine flour, eggs, sugar, and 1.5 cups of milk. Mix at medium speed until blended. Add remaining .5 cup of milk and the 1/4 cup melted butter. Stir just to combine.
Preheat medium skillet; spray with Pam or something similar. Pour batter onto skillet in 1/4 cup batches. It should spread thin easily. When pancake appears a little dry on top, turn and briefly cook other side. Transfer to plate, roll up, and keep warm. Best served warm. You can serve with syrup, fruit, etc (like I said, I used just a bit of powdered sugar and some blueberries).
Serving is 2 pancakes. Serves 6.
