mix coconut, 2 tbsp flour, 2 tbsp sugar and 2 tbsp dates in a small bowl and drizzle with 1 tbsp oil. whisk 3/4 cup of coconut flour, whole wheat flour, 1/4 tsp of baking powder, 1/8 tsp of salt, 1/2 tsp of cinnamon, 1/4 tsp of baking soda together in a bowl. whisk 1 tbsp of oil, egg, egg white, milk (with 1 tbsp of lemon juice) butter and 1 tbsp of coconut extract in a bowl and mix. Make a well in dry ingredients and add wet ingredients. add blueberries and remaining dates. pour into 12 muffin pan. sprinkle with coconut toping and press into batter. cook 20 minutes
cook at 400 degrees for 20 minutes
