Wheat Pilaf with Lentils

Ingredients
1 Cup Brown Lentils2 Cups Water1 tsp salt2 Cups Beef Broth (or bouillon from cube)1 stick unsalted butter (optional)2 medium onions coarsley chopped (optional)1/4 tsp black pepper4 TBS olive oil (optional)
Directions
1. Rinse lentils, place in saucepan with water and bring to the boil. Lower flame and simmer gently for 10 minutes or until lentils are tender. Add salt last few minutes. Drain lentils.

2. Bring broth to the boil, add cracked wheat (bulgur) and drained lentils. Bring to boil again then simmer, covered, for twenty minutes or until liquid is absorbed. Shut flame.

3. Meanwhile, melt butter** in skillet (** I use olive oil) add onions and saute them until golden brown. Add to pilaf with pepper and mix gently. Taste to adjust seasoning. Serve at once.

Yield 6 or more servings
