Pumpkin Banana Bread

*Flour, white, 0.75 cup *Whole Wheat Flour, 0.5 cup Baking Soda, 0.75 tsp Salt, 0.5 tsp Cinnamon, ground, 1 tsp Cloves, ground, 0.5 tsp Nutmeg, ground, 0.5 tsp Banana, fresh, 1 medium (7" to 7-7/8" long) Pumpkin, canned, without salt, 0.5 cup Butter, salted, 2 tbsp Brown Sugar, 0.5 cup, unpacked Egg white, 1 serving Egg, fresh, 1 large Vanilla Extract, 1 tsp
Preheat oven to 325. Grease a 0x5 inch loaf pan with baking spray. In a medium bowl, combine flour, baking soda, pumpkin spice and salt with a wire whisk. Set aside.
In a large bowl, cream together butter and sugar with an electric mixer. Add egg whites, egg, bananas, pumpkin and vanilla, and beat at medium speed until thick. Scrape down sides of the bowl. Add flour mixtures then blend at low speed until combined. Do not over mix.
Pour batter into loaf pan and bake on the center rack for 60 minutes, or until a toothpick comes out clean.
Let the pan cool for at least 20 minutes, bread should be room temperature before slicing.
*1 teaspoon of pumpkin spice can be substituted for cloves and nutmeg.
