Taco Filling

Ingredients
1 lb ground beef (or 2 c kidney beans)3/4 c onion, chopped1/2 c green pepper, chopped1 carrot, shredded (optional)3 cloves garlic, crushed1 T fresh cilantro, chopped1 T fresh parsley, chopped (or 1 tsp dried)2 tsp chili powder2 tsp lime juice1 tsp ground cumin1/2 tsp salt
Directions
In a large frypan, saute meat, onions and green pepper until browned. Add remaining ingredients and saute until garlic is cooked. Serve with rice in tacos or tortillas. Garnish with cheese, tomatoes, olives, lettuce, guacamole, salsa, and/or sour cream.
