Quinoa and Veggies

1 C Quinoa (pre cooked)1 C Veggie Broth1/2 C Green Peppers (chopped)1/2 C red Peppers (chopped)1 C Yellow Corn (canned, drained and rinsed)1 C Asparagus (cut into 1" pieces)1 C Tomatoes (diced)1 C Mushrooms (Fresh and chopped)Fresh Cilantro or Fresh Basil to tasteGarlic to taste
Pre Cook Quinoa and set aside
In large Saute pan, add all half veggie broth and all other ingredients except Quinoa.
Stir fry until veggies are soft and tender. Add second half of veggie broth and prepared Quinoa and cook over medium heat until well incorporated.
Serving Size: serving size is about 1/3rd of a cup but may be more towards 1/2cup
