Butternut Squash Pizza

Ingredients
1 pre-made pizza crust (or make your own!)2 tbsp olive oil1 tbsp butter1 shallot, finely chopped2 cups butternut squash, cubed10 sage leaves1 cup tomato sauce (chunky is preferable)2 oz. goat cheese 2 oz. mozzarella, part-skim
Directions
preheat oven to 400º

place olive oil, butter, shallots, squash, and 1/2 the sage into roasting pan, coat, and put in oven for about 20 minutes or until soft

increase oven heat to to 425º and grease baking sheet

spread tomato sauce on crust, leaving about 1 inch edge

spoon squash/shallot mixture on top of sauce

cover with thin slices of mozzarella

crumble goat cheese

add remaining sage to pizza

salt and pepper

bake for 15-20 minutes until crust is crispy
