2 1/2 cups Cauliflower, cooked and riced1 1/2 cups Browned Ground Turkey1/2 cup Onion, chopped1/2 cup Green Bell Pepper, seeded and chopped1/2 cup Tomatoes, seeded and chopped4 ea Eggs
1. Combine first 5 ingredients in a medium bowl.
2. Heat oil in a large nonstick skillet coated with cooking spray over medium heat. Add cauliflower mixture, and cook 5 to 7 minutes or until mixture is thoroughly heated, stirring occasionally.
3. Form 4 (3-inch) indentations in cauliflower mixture using the back of a spoon.
4. Break 1 egg into each indentation. Cover and cook 10 minutes or until eggs are done.
Serving Size: Makes 4 equal servings
