Parmesan Encrusted Tilapia stuffed with crab meat

6 Tilapia Fillets (about 6 ounces each)12 ounces of fresh dried flaked crab meat1 small onion1 celery rib3 eggs lightly beaten1/4 cup fresh parsley 1 cup bread crumbs, divided1 Tablespoon lemon juice1/8 tablespoon cayenne pepperMelted butter1 Tablespoon Paprika powder1/2 cup parmesan cheese1/2 cup butter, softened, divided3 Tablespoons mayonnaise2 Tablespoons fresh lemon juice1/4 teaspoon dried basil1/4 tespoon ground black pepper1/8 teaspoon onion powder1/8 teaspoon celery salt1 whole carrot bruinoise diced1/2 cup fresh peas
-Preheat oven to 400* F.
-In a small bowl, mix together the parmessan cheese, 1/2 the bread crumbs (1/2 cup), 1/2 the butter (1/4 cup), mayonnaise, and lemon juice.
-Season with dried basil, pepper, onion powder, and celery salt.
-Dip the tilapia into the beaten eggs and then into the cheese, bread crumb, herbs and spices mixture, shake off excess and set aside.
-Chop the onion, carrots, and celery into fine pieces.
-Saute the onion, carrots, and celery with butter in a frying pan until the vegetables are tender (you may choose to start the onion and carrots before the celery as they tend to take longer to become tender).
-Add the parsley to the frying pan.
-Remove the frying pan from the heat.
-In a seperate bowl mix together contents of frying pan with crab meat, bread crumbs, lemon juice, and cayenne pepper.
-Grease a 9x13 inch casserole dish.
-Spread the crab meat mixture down the center of the tilapia, fold the tilapia around the crab, and turn over so that crab meat and edges of tilapia are touching casserole dish.
-Sprinkle melted butter and paprika on the top of the tilapia.
-Place casserole dish into oven and bake at 400* for 20-25 mins. The baked tilapia is finished when it is easy to flake the fish with a fork.
