Mint-N-Chip Ice Cream

4 1/2 Cups skim milk3 egg yolk1/2 Cup splenda1/2 Cup semi sweet chocolate pieces chopped1 tsp peppermint extract
Separate the eggs placing the yolks into a medium size bowl and add 1 cup milk and whisk.
Place the remaining milk into a sauce pan and heat on medium heat until it almost boils.
Slowly (about 1/2 cup at a time) add the heated milk to the egg mixture and whisk after each addition.
Pour the entire egg mixture back into the sauce pan and heat until it coats the back of a wooden spoon.
Cool in refrigerator. When cool follow your ice cream maker instructions for freezing!!
Add semi sweet chocolate pieces when your ice cream maker suggests to add it!!
