Mock Tabbouleh Salad

Ingredients
8 Kalamata olives, chopped6 scallions, chopped1 small red bell pepper, chopped, seeded2 Roma tomatoes, chopped3 Tablespoons fresh mint, chopped1/4 cup fresh parsley, chopped1 cup quinoajuice of 1 lemon3 Tablespoons olive oildash of saltfresh ground black pepper, to taste
Directions
1. Cook the quinoa according to package instructions. Then set aside to cool.
2. In a large bowl, place all of the chopped vegetables and herbs.
3. Add the cooled quinoa, lemon juice, olive oil, salt and pepper
4. Toss together so fully incorporated
5. Either serve at room temperature or chilled
note: crumbled Feta cheese is a tasty topping for this salad
