Mushroom Barley Soup w/ Lentils

2 TBS. olive oil2 medium onions, chopped3 medium carrots, chopped16 oz./453gm sliced mushrooms5 medium stalks celery, chopped2 cloves garlic, minced10 cups water1 cup barley1 cup lentils1/2 tsp. thyme, dried1 tsp. basil, dried1 tsp. black pepper1 bay leaf1 TBS. parsley, dried2 medium potatoes, chopped
Heat oil in large pot.
Add next five ingredients. Cook until slightly tender. Add water, barley, lentils, all the spices.
MIx, cover and cook on high until it boils. Stir frequently.
Reduce heat to medium/medium-low, keep covered, and cook for about 1 1/2 -2 hours. Stir frequently.
Add potatoes when barley is soft and cook 20-30 minutes.
Serving Size: Makes 8 servings about two cups per serving.
