Chicken with 40 Cloves Garlic

Ingredients
2 sprigs fresh thyme2 sprigs fresh rosemary2 sprigs fresh sage2 springs fresh Italian parsley40 cloves garlic, unpeeled1 teaspoon salt1/4 teaspoon groung black pepper4 pounds whole chicken2 stalks celery, sliced1 loaf French bread, sliced
Directions
Place 1 sprig thyme, rosemary, sage and parsley in chicken cavity.
Place celery in crockpot. Put chicken on top of celery.
Add garlic around chicken. Chop remaining herbs; sprinkle herbs, salt and pepper over chicken.
Cover; cook on low 8 to 10 hours or on high 4 to 6 hours.
To serve, place chicken, garlic and celery on serving platter.
Squeeze roasted garlic of out skins onto toasted French bread slices and spread with knife.

    I ended up peeling all of the garlic and putting 10 cloves inside the chicken with the rest outside. The garlic adds a great flavor, but it's not overpowering. When we were done with the carcass I made chicken broth which turned out great because of the garlic flavor. - 4/11/11
