Party Mashed Potatoes

Ingredients
15 Med. potatoes1 cup low fat cream cheese1 cup reduced fat sour cream1 cup shredded colby/monterey jack cheese4 tbls. light margerinesalt and pepper or Mrs. Dash
Directions
Peel potatoes
boil potatoes until soft enough to mash, drain
mash potatoes and add the cream cheese, sour cream, margerine, and 1/2 of shredded cheese
using a mixer, mix all ingredients until well blended
Butter a 13x9x2 pan or larger
place potato mixture in butter pan
bake at 350 degrees for 25 min.
add rest of shredded cheese on top and bake another 5 min or until cheese is melted
You can decrease or increase as desired
