1-derfully Healthy Banana Bread

Ingredients
1 cup mashed ripe bananas1/2 cup orange juice1/2 cup natural sugar1 egg2 cups unbleached flour1 1/2 teaspoons baking powderolive oil cooking spray
Directions
1. Preheat oven to 350º F. Lightly spray a 9x5-inch loaf pan with olive oil cooking spray.

2. Mash bananas with a fork.

3. Add natural sugar. Beat in egg and mix well.

4. Sift together flour and baking powder; add all at once to liquid ingredients. Stir until well blended.

5. Turn into prepared pan.

6. Bake for 50-55 minutes or until knife inserted in center of loaf comes out clean. Cool 5 minutes in pan.

7. Remove from pan and complete cooling on a wire rack before slicing.

Yield: One loaf—Servings: 12
