Navratan Korma

Ingredients
1 tablespoon vegetable oil1 tablespoon ginger-garlic paste1/2 teaspoon turmeric1/2 teaspoon cayenne1 teaspoon coriander powder2 teaspoon garam masala1 medium onion, grated1 8oz can tomato sauce1/2 cup heavy cream3 cups boiled vegetables (cauliflower, peas)Salt to taste
Directions
1. Boil vegetables until al dente and set aside.
2. Add oil to the pan and fry the grated onion and ginger-garlic paste until golden.
3. Add spices to the mix and fry for a couple of minutes.
4. Add tomato sauce. Stir well for about 4 minutes, taking care not to let it stick to the pan.
5. Add cream, and bring to a boil. Reduce heat and cook until sauce thickens.
6. Add vegetables and mix well. Simmer for another 5-7 minutes or until thickened.

For added flavor, try adding a little cardamom, clove and cinnamon to the mix.
