Ground Turkey Enchiladas w/PepperJack Cheese

ground turkeypepper jack cheeseenchilada saucecorn tortillassalsasour cream or guacamole (optional) to garnish
In skillet brown ground turkey. Once fully cooked add in 1 cup salsa and let simmer. Add other preferred seasoning to taste. (pepper, chipotle, etc)
Roll about 1/4 cup of meat mixture in each tortilla and place in 9x13 pan. Continue until you use all meat/tortillas.
Sprinkle cheese over enchiladas, pour on enchilada sauce and bake at 350 for 30 minutes or until cheese is bubbly.
**To prepare ahead of time roll the meat in the tortillas, place in pan, cover and refrigerate. Pull out of fridge 20 minutes prior to cooking, pour on sauce and sprinkle cheese. Bake as directed. (I usually prepare on the weekend and then bake during the week for a quick weeknight dinner, with very little hassle).
