* Flax Seed Meal (ground flax), 1 tbsp * Almond Breeze Almond Milk, Unsweetened Original, 8 oz * Yellow Sweet Corn, Frozen, 1 cup kernels * Applesauce, unsweetened, .5 cup * Canola Oil, 1 tbsp * Yellow Cornmeal, 1 cup * Whole Wheat Flour, 1 cup * Salt, .375 tsp * ground tumeric, .25 * Baking Powder, 2 tsp * Baking Soda, .25 tsp * Unrefined Sugar, 3 tbsp * Garlic Powder (1 tsp or to taste)
Mix flax, milk & 1/2 c corn in food processor or blender until smooth. Add to other wet ingredients. Sift in dry ingredients & stir until just combined. Spoon into greased muffin tin or 8x8 pan. Bake 22-25 minutes, or until inserted toothpick comes out clean. OR portion out with cookie scoop into mini-muffin tin and bake for about 18 minutes.
Serving Size: Makes 8 regular muffins or squares, or 24 mini muffins.
