1 Package (12 oz) Healthy Harvest Spiral Pasta (Rotini)3 Plum Tomatoes, seeded & chopped1 Green Pepper, choped1 Small Onion, thinly sliced1 can (2 1/4 oz) Sliced Ripe Olives, drained3 TBSP White Wine Vinegar2 TBSP Honey1 TBSP minced fresh Marjoram OR 1 TSP dried Marjoram1 1/2 TSP minced fresh Basil OR 1/2 TSP dried Basil1 TSP Dijon Mustard3/4 TSP Salt 1/4 TSP Black Pepper (or to taste)1/2 Cup Olive Oil
Cook pasta according to package directions. Drain & rinse pasta in cold water. In a large bowl, mix the pasta, tomatoes, green pepper, onion & olives.
In a small bowl, mix the vinegar, honey, marjoram, basil, mustard, salt & pepper. Slowly whisk in the oil. Pour over the Pasta & toss to coat.
Cover & refrigerate until chilled.
Serving Size: Makes 12 One Cup Servings
