Chicken Manchego

Ingredients
5 oz Diced or shredded cheese1/2 Roasted Red Pepper2 tsp Lemon Zest (or juice - Spark would not let me put zest)3 Tbsp Slivered Almonds4 Tbsp olive oil divided1/2 Tsp Oregano1/4 Tsp salt1/4 Tsp pepper1/4 Tsp Crushed Red Pepper1 3/4 boneless skinless chicken breasts2 Tsp Lemon Pepper Seasoning
Directions
Dice Cheese and Red Peppers into small bite sized pieces.
Zest Lemon peel - or juice lemon.

1. Combine cheese, peppers, zest, almonds, 3 tbsp of oil, oregano, salt, pepper and redpepper; let stand 15-30 mins for flavors to combine
2. Preheat Grill pan on medium-high 2-3 minutes. Coat chicken with 1 Tbsp olive oil; sprinkle with lemon pepper. Place chicken in pan; grill 4-5 minutes on each side.
3. Slice chicken; top with cheese mixture and serve.
