Gazpacho

Ingredients
1 hothouse cucumber, cut into 1" pieces2 red bell peppers, cut into 1" pieces1 red onion, cut into 1" pieces3 cloves garlic, minced3 cups (24 oz) tomato juice1/4 cup good olive oil1/4 cup white wine vinegar1 t black pepper1/2 t salt
Directions
1. One by one, put the cucumber, bell pepper, and onion in a food processor and pulse 3-4 times until well chopped. Careful not to process the vegetables too much.
2. Combine all ingredients in a large bowl and allow to sit for 1 hour to 24 hours.

Serving Size: makes 4 one and a half cup servings
