Breakfast Casserole (turkey bacon, cheddar, potato)

20 oz of shredded red potato1 tsp olive oil1/4 cup chopped onion8 slices cooked Jenny-O turkey bacon, crumbled1 cup 50% red. fat shredded cheddar cheese1/2 cup skim milk1 1/2 cups egg substitute1/2 cup chopped red pepper
Saute chopped onion in 1 tsp hot olive oil until translucent. Add in shredded potato and cook until browned. Layer potatoes, bacon crumbles, and cheese in crock pot. Combine milk and egg substitute. Whisk in chopped peppers. Pour over layers in pot. Cook on low overnight (6-8 hours until set).
