maryam's turkey soup

Ingredients
2 cup, chopped or diced Turkey breast2 cup, chopped Onions1.5 cup, diced Celery, 3 carrot medium Carrots, chopped1 cup, chopped Scallions 2 tbsp Minced Garlic3/4 cups uncooked Brown Rice, medium grain3 quarts of Water2 tbsp powdered Chicken boullionsea salt, pepper, lemon pepper, cajun seasoning, ground coriander
Directions
In a large stock pot:

Add 1 quart of water (or 1 quart turkey/chicken stock), bring liquid to a boil
Add turkey, onions, celery, carrots, scallions, garlic, and remaining water
Stir in powdered chicken boullion if stock wasn't added in the beginning
Add rice
season to taste with salt, pepper, cajun seasoning, and coriander.
Bring to a boil, and simmer on med/low heat for a minimum of 1 hour.
