Milk, 2%, 1.5 cupCheddar Cheese, 2 cup, shreddedMonterey Cheese, 2 cup, shreddedCream Cheese, 8 oz, softenedGarlic Cloves, 3, dicedScallions, raw, 1/2 cup, choppedSpinach, frozen, 1/2 of a 10-ounce packageDry Mustard, 1 tspPepper, red or cayenne, 1 tspGarlic powder, 1 tspPepper, black, 1 tsp
In fondue pan, use whole garlic clove and rub fondu pan on bottom and sides. Add cream. Add cheeses slowly, starting with cream cheese and make sure to use whisk to thoroughly mix together. Add other cheeses using spoon in a figure 8 pattern to incorporate. May need additional cream and/or water to loosen mixture. Add in green onions, spinach, mustard, cayenne, garlic powder and black pepper. Continue cooking until well blended.
Serve with your favorite low-carb vegetables. May also be served with grilled meats, which are cut into pieces. For non-low-carbers, you can serve with cooked potato wedges, chips or french bread cut into cubes. Enjoy!
