Uber-veggie omelet

Ingredients
3 egg whites1/4 of a bell pepper1/4 of an onion1/2 of a plum tomato1/2 of a small stalk of broccoliA few shreds of cheese to top.
Directions
Chop the veggies, saute until softened. Add the egg whites. Cook on med high until set. Plate, add a few sprinkles of cheese (1/2 oz max).
