Tuna Salad Lettuce Wrap

Ingredients
1/2 C Cucumber, peeled and diced1 Egg White, hard boiled1/4 C Celery, chopped1/4 C Raw Onion, chopped1/4 C Chickpeas (Garbanzo Beans),3 oz Tuna, canned in water3 tsp Dijon Mustard1/4 tsp Black Pepperjuice of 1 lemon wedge (1/6 lemon)
Directions
Hard boil the egg. Peel and remove the yolk. Dice egg white and combine with tuna, chopped vegetables, lemon juice, mustard and pepper.

Scoop mixture into the center of 3 large red or green leaf lettuce leaves and wrap together (depending on size of leaves this can be 3 individual wraps or one large wrap).
